Cooking on a budget doesn’t mean scrimping on great taste or eating unhealthy options. In fact I think that serving up healthy meals while on a budget can often have lots of unseen benefits. The first and most obvious one is that we tend to be more aware of how much food we buy when budgeting and therefore have smaller portions that are generally more in line with nutritionist’s recommendations.
But it’s not only smaller portions that can make your budget go further the way you serve food also has an impact too. For example if you make a pot of chilli and serve it with rice you are likely to use at least 500g of minced beef for four people. If however you place the chilli in some soft shelled tacos you use less, so that same amount of chilli will serve between 6 and 8.
Meals with strong or complex flavours can also help to dial down appetites, so keeping a few pots of herbs growing on your windowsill is a really cheap way of adding a flavour hit to so many meals, and what’s better is that with a little daily watering, fresh herbs can just keep on giving.
